Simple Crêpe Recipe - Dairy Free

If there was ever a breakfast staple that makes you feel fancy and luxurious, to me, it would be crepes (waffles come in a close #2 and I'm talking Belgian not Eggo).  Maybe it's the french name and the fact that the first one I ever had was at 18. Yup. That's the truth. I was visiting a friends house in university and he was whipping up a savory batch filled with scrambled egg goodness. It was both memorable and delicious as I devoured it with abundant amounts of maple syrup. 

Here is my recipe:
1 cup flour
1/2 cup water
1/2 cup almond milk
1/4 tsp salt
2 tbsp melted butter

Simply whip all the ingredients together (make sure it is the consistency of light gravy, if not add a little water) and ladle a scoop into the middle of a frying pan on medium heat. 

Tilt the pan to spread the mixture around into a larger circular shape. 

You will know when to flip it over when the batter turns matte and can easy be lifted from the pan with a spatula. Cook on the other side for 1 minute.

Recipe will make 6-8 crepes depending on the thickness of the batter and how large your pan is.

As dairy is a problem for my tummy you can see that I've substituted almond milk. For those with no problems you can use regular milk. Well, there you have it and now it's time to fill your crepes with your favourite things. Mine is usally a combination of strawberries, bananas, and dark chocolate chips.

Proscuitto + Goat Cheese + Swiss Chard Quiche


Long weekends are one of the best times to have brunches, get away, or just relax if you can. That extra day can really make a difference and in my case a chance to visit with friends and family and make some of my favourite brunch items. The best items in my opinion are eggs Benedict, anything with potatoes, and of course quiche! So that's what I'm going to share with you guys today.

I find quiche like the scrambled eggs of bunch items. That means anything that can be put in and baked. Ham, bacon, cheeses, broccoli. Anything that makes you and yours happy! 

The combination that makes by taste buds happy is prosciutto + chard + goat cheese = perfection!

For the crust:
2 1/2 cups all-purpose flour, plus extra for rolling
1 cup (2 sticks or 8 ounces) unsalted butter, very-cold, cut into 1/2 inch cubes
1 teaspoon salt
1 teaspoon sugar
6 to 8 Tbsp ice water

(I sometimes cheat and buy a pre-made Pillsbury pie crust, long weekends are meant to be relaxing after all!)


For the filling:
2 tablespoons olive oil
1/2 medium onion, sliced thin
1 bunch Swiss chard (red - green rainbow - your choice), washed and patted dry
4-6 slices prosciutto

4 eggs, slightly beaten
salt and pepper
pinch of freshly grated nutmeg
4 to 6 oz (120gr - 180gr) crumbled goat cheese
a few sprigs of thyme


I won't hit you with a wall of text on how to make a pie crust. My go to recipe is here.

After the pie crust is baked and cooled you can start preparing the filling:

Preheat the oven to 350F and position a rack in the middle.
Heat the oil in a large saute pan over medium high heat and cook the onion until translucent (about 3-4 minutes), add the Swiss chard and cooked until wilted. Remove from the pan and set aside to cool. In the same pan, quickly saute the slices of prosciutto to get them nice and crispy. Remove from the pan.
In a large bowl, whisk together the eggs, salt, pepper and nutmeg. Layer the onion and Swiss chard at the bottom of the crust and slowly pour the egg mixture over it. Top with slices of prosciutto and crumbled goat cheese.
Bake for about 30-40 minutes or until the tart starts getting golden brown and the egg mixture is cooked. Sprinkle with freshly chopped thyme.

Eileen Fisher Media Opening

I was at the media breakfast for a brand that I've known for cozy sweaters and timeless basics, Eileen Fisher. At its first Calgary location in Chinook Centre and It has already been open for a month but its official opening was on September 21st. What I also learned was that they are a brand built on an ethical and environmental foundation. Where all their silks are coloured with no chemical dyes and cotton is grown without pesticides. The breakfast was really informative as it was stylish. It was also the day after my new hair cut, what you do think? my ends were really getting dry and my new cut gives me some much needed volume. My favorite items were the metallic coated sweaters. I'm always looking to stock up for the long cold winters, and what could be better then sipping hot chocolate watching a movie and wearing some comfy sweaters? All while it's blizzarding outside.
