It's been a hot couple of days here in Calgary and I'm sure many of you are enjoying stampede and everything that it involves. With the weather being so amazing it makes us all want to find the best way to cool off a bit and what better way than with a nice treat. This one is for the not too sweet tooth but for those looking to enjoy something refreshing and dairy free, and that can be hard to find with frozen desserts. I've found a love of using coconut milk as a dairy substitute and it has turned out amazingly!
What you will need:
1 Can Coconut Milk (400g-ish)
1 Cup Almond Milk
4 Tsp Matcha Green Tea Powder
3 Tsp Agave Nectar or more depending on how sweet you like it
Mix all ingredients together and pour into moulds. Allow them to freeze for 5-6 hours, and there you have it! Simple Coconut Green Tea Popsicles. Yum!
*For those wondering I didn't have moulds so as a substitute the little Rubbermaid dressing containers that come in the food storage sets were used with some well placed elastic bands to hold the wooden sticks. Yes, I'm talking about the plastic containers with the red lids that come in multi packs at Wal-mart and all the grocery stores.

Red Balloons
A few photos from the themed shoot at Edworthy Park. I've learned that tall grass and balloons do not work out well. By the end 2 balloons were popped and an array of photos were taken of me with strange faces. Above are the most subdued non-crazy ones where I'm not dancing or fighting with grass going up my skirt. Good times.

Going La La for 'La La Land' by Mink Pink
I received some great images from the Mink Pink fall preview titled La La Land and they are perfectly in tune with my next post. I'll give you a hint it involves the flower crown from the previous post. Though my post will be more subdued the brand images are fun and would make any girl want to enjoy the summer sun with friends. All of course wearing some rad Mink Pink threads! DIY Flower Crown
After browsing hundreds.. okay not that many but there are a huge number of flower crowns on Pinterest I was inspired to make my own for the next outfit post. It was incredibly easy and so customizable to your taste. I chose to go with white, purple, and a touch of yellow.
What you will need:
Headband
Fake flowers - choose a variety of shapes to mix and fill in spaces
Metal wire - choose a thin gauge like the stuff used in jewellery making
All my supplies were purchased at Dollarama and the crown cost about $5-6 to make.

Apple Jam with Cinnamon
Sure it might be summer in Calgary but considering recent events I've got what can be called the emotional blues. So I've decided to make a comforting spread that takes me into fall and winter and far from the present. Plus a bonus is that it's a twist on my moms favorite dessert apple pie (I'm lying it's really her second next to cheesecake, but I had a lot of apples laying around!)
Preparation Time: 30-45 minutes
Cooking Time: 30-45 minutes
Keeps for 1-2 years
4-5 apples (pealed, cored and cubed)
1/2 to 1 cup sugar (depends on how sweet you want it)
500ml apple juice
Juice of 2 limes
2 cinnamon sticks
1/2 tsp cinnamon
One shot of rum
1 Tbsp pectin extract/Certo (if required)
Prepare the syrup by bringing the apple juice, sugar and cinnamon sticks to boil in a large pan and cook on high for about 10 minutes, until it thickens and becomes golden.
In the meantime, juice the limes and keep in a bowl or cup.
While the syrup is boiling, peal, core and cube 2-3 apples at a time, and add some limejuice to stop the apples from browning. Repeat the process and make sure you’ve got 1.2kg/42 oz in total.
Once the syrup has become golden, add the apples and 1/2 teaspoon of cinnamon and bring to a “rolling boil” for 2-3 minutes on a high temperature.
Turn the heat down and let the apples simmer gently for about 15 minutes.
A sign that the jam is done is when the majority of the fruit is translucent and the apple jam isn’t liquid anymore. If the jam has the right consistency but doesn’t want to set, turn the heat off, move it off the heat and add the pectin extract (Certo) and don’t boil any longer.
Once you’re happy with the consistency of your apple jam, take it off the heat, remove the cinnamon sticks and add if you want a shot of rum. You won’t taste it but I like adding it as I believe it contributes to a better preservation of the jam.
*Some things not included are the sanitation, filling and sealing of jars. To keeps this post shorter they were left out but if you would like more detail check out this video..

Shoe Session

Lovely Day
I hope you all had a great weekend! because I sure did. Sunny days filled with shopping ,driving around in a red convertible, swimming in a pool, and eating in outdoor cabanas. If only every weekend could be so lovely!
